My mint plants need to be cut back, but I don't really want to dry the leaves, as I only like fresh mint.

Can I freeze mint leaves + stems. Is that an acceptable thing to do.

(I also do not have the energy for any cooking/distilling/whatever. I am for some reason at Peak Physical Shittiness this week and have barely made it out to the mailbox.)

I don't see why not? Pick 'em fresh, lay them out flat on a paper towel or something and they'll freeze quicker.

Very acceptable... lists of freezable herbs tend to include mint as one that is better frozen than dried.

Depending on how long you're thinking of keeping them, and how worried you are about freezer burn or just drying out in the freezer, you can also try freezing them in water. Put leaves in icecube tray, half fill with water, let freeze, fill the rest of the way to make sure leaves that floated are now covered, freeze again.

I've never tried it, but let me know the results because I never cut back the mint enough and then they get diseased and gross.
