Don't say "applesauce," I mean like, something like glycerine capsules but somewhat moldable like when you're making a dumpling, you just wrap up the unpleasant-tasting substance in the tiny flavorless dumpling and swallow it?

This makes me think of the very thin and flavourless flexible rice paper that wraps White Rabbit candies inside the individual candy wrapper, which you're meant to suck on until it dissolves. I've never seen that sold for separate use, though (or indeed used for anything except to wrap candies invented by Communist China).
