Don't say "applesauce," I mean like, something like glycerine capsules but somewhat moldable like when you're making a dumpling, you just wrap up the unpleasant-tasting substance in the tiny flavorless dumpling and swallow it?

Depends on how much of the unpleasant-tasting substance you need to wrap, what sort of consistency it has (powder or liquid or in between) ... and how big a wrapper you can swallow without needing to chew.

The soft center of a slice of bread is suitably moldable and relatively flavourless. Otherwise perhaps plain gelatin? or agar-agar?
