I don't know what you thought you were making, but I bet it would be delicious. Mmm, avocado and mayonnaise and seitan...

I had no idea the wheat gluten was the same thing as seitan until just now. (I finally remembered that I'd wanted it because I'd read it made loaves of bread less dense. The rest I'm still not sure about. A very unusual California roll?)

Tostadas, with the beans? With tomatoes mixed into the avocado with mayo to keep it green? That's how my mum makes it.
